Low Carb Pancakes

Low Carb Pancakes & Waffles (makes 4 pancakes)
1/4 c. Low fat cream cheese
2 eggs
2 TB oat bran
1/4 t. Vanilla
1/4 t. Cinnamon
3/4 t. Baking Powder
1 T. Artificial Sweetener (she used Truvia & I used Splenda)

Heat griddle/waffle iron to350*.  In a small glass bowl, microwave cream cheese until soft (about 20-30 seconds).  Beat with a fork.  Add eggs one at a time, beating until completely mixed in.  Add your remaining ingredients and mix well.

Pour into cooking vessel and cook until brown on both sides.

For freezer:  allow pancakes to cool then spread in a single layer on a cookie sheet. Freeze until hard then seal in a freezer bag.  To thaw, just stick them in the toaster.

Note:  I found they had an acceptable flavor, however they did not rise quite as much as I would like.  I’ll try then again and see if the results are the same.
